  1. Bake pie crust according to package directions; cool.
  2. In medium bowl, beat cream cheese, sugar and vanilla with electric mixer until smooth. Add in whipped topping; continue mixing until well combined. Spread into pie shell.
  3. Toss peaches with fruit fresh according to package directions. Place peaches on filling in desired pattern. Refrigerate until set. Garnish with mint leaves if desired.
