At 9 weeks pregnant with full-on morning sickness and food aversion, I was craving something with black beans, chicken and tomatoes, but couscous sounded good too. After a search online, nothing popped up so I created this. Turned out pretty good. Enjoy! Next time I'm going to add cream cheese and mix it in. I bet it'll be even better.

Directions

  • Bring the water to a boil in a saucepan with the chicken bouillon and the butter; pour over the couscous in a large bowl. Cover the bowl with plastic wrap and allow the couscous to absorb the moisture entirely, 5 to 7 minutes. Fluff with a fork. Set aside.

  • Heat the olive oil in a large skillet over high heat. Cook the red, yellow, and orange bell pepper with onion in the hot oil until softened, about 5 minutes; season with the garlic powder. Add the chicken to the skillet and continue cooking until the chicken is no longer pink in the center and the juices run clear, about 5 minutes. Stir the couscous, tomatoes, black beans, and white wine into the mixture; continue cooking and stirring until heated through, 2 to 3 minutes. Top with the cheese to serve.

I loved this and so did my family! It's really good especially if you are a veggie lover. I didn't quite like all of the cooked veggies but that is just my opinion.:) A good recipe for the family!

Very good! Nice entree that is perfect for summer. Just added some more salt and other herb seasoning for taste:)

Thank goodness for pregnant women and their cravings! This was wonderful! I think next time I will drain the tomatoes first as it was a little too runny. I used flavored couscous. This will be on my dinner rotation now.

The only change I made to this recipe is instead of garlic powder I used fresh garlic cloves. My husband seasoned it with lawry's seasoning salt. We both really loved this recipe! I second another reviewer's comment thank goodness for pregnant women and their cravings!:)

My family loved this meal even my four and two year olds! I did add some cumin and chili powder for more flavor. I'll definitely make it again!

This recipe was excellent! I gave it four stars simply because I had to add cumin just to give it a little more flavour. It was 'almost there' in the flavour department but not quite. It felt like a spanish dish so the cumin was all it needed. My three year old son loved it - and he's a picky eater!

Blah! So bland... And I like healthy eating but this had nothing to offer. Tried to save this by adding cumin and lime but it couldn't be rescued. Unfortunate as I made enough to freeze for a second meal and it will probably never get eaten.
