Be careful, baked too long at 15 min. Came out dry...but, my fault! :) These will be great a 'go to' for my kids breakfast. Can pretty much add what you want.
I made no changes, and will make again.
yum! I woke up late this morning with absolutely no food in the house, except for eggs, onions and leftover chicken. dump that all in, with a large pinch of salt and pepper, and here's my brunch! Thanks so much :)
These were pretty good, but needed something else. Not sure what. I added cheddar cheese and only used 10 eggs. My Husband liked them, but thought they needed a boost of some kind as well. Will make them again.
This is a really good basic recipe. I think it's fine as is, but it's so easy to change it up and make it to your own taste as well. There are so many good ideas on here. The second time around I used turkey sausage, low fat cheddar cheese, and salt substitute. Then I put it in a silicone muffin pan and popped them in the microwave for 4 minutes ( each microwave is different though). Next time I'll make a variety as there are so many options!
I doubled the amount of sausage on accident and it turned out better than I ever expected!! great recipe thank you!
sooooooo much easier than standing over a stove cooking each of our 4 kids an omelet! i used just eggs, cheese, some turkey sandwich meat, salt and pepper...these were so good and soooo easy! just throw all the stuff in the pan and into the oven...i ended up cooking it for 30 minutes just to be sure the eggs were cooked all the way...didn't want the kids eating raw eggs! will make frequently...they loved them!
I added basil and didn't use garlic, I put in sausage, peppers, cheese, egg, basil, onion powder and salt and pepper. Turned out yummy. Only issue I had was they stuck in my muffin pan. I'll have to used more oil or butter next time!
Easy to make - tastes good. I added jalapeño peppers to spice it up.
In spite of spraying the muffin tins generously, they severely stuck. Cleaning that up was a chore. Gonna try something different next time. Didn’t have green chiles, subbed bell pepper. Used 1 lb of sausage.

Easy! Great recipe to make when I have too many fresh eggs. Next time I plan to freeze them...they didn't make it to the freezer this time

My wife made these. They were delicious and pretty easy to make. We used scrambled eggs, and wife changed the seasoning a bit, but I thought it was really well done and stores really well which is good because we make our keto food on Sunday to last the week. Loved the idea and the execution!

Very easy to follow. Egg muffins were very tasty. Easy to personalize, too. Could toss just about anything into these.
I filled the cups more than 1/3 full! Then, they sank! I still have 6 more to make...I'm glad I went back to the recipe and saw my error...not 1/3 cup into the muffin cup...1/3 full! I will make them again though.
Great to make on a Sunday for a quick on-the-go breakfast during a busy week.

This was easy and a good low carb meal -- I used green onion to have more taste based on reviews and also added mexican shredded cheese and I used hot sausage because we like spicy food. Family loved it and I doubled it to have an easy grab and go or easy re-heat go to. I added some garlic salt on it when I was eating it but it was good without it also -- I just enjoy garlic also The boys put them on a sub roll as they are not carb conscious and I kept hearing....ummmmmmm :)
Delicious! And they smelled SO GOOD coming out of the oven. I did add 1/2 cup of shredded cheese and used Egg Beaters instead of regular eggs. I also added cajun seasoning for some extra flavoring. I'm going to try it with bacon next time!
Love this recipe! I am always looking for recipes that are Very simple for Breakfast! I hate cooking in the morning. I will sometimes but ICK! so I made these last night. Very easy. I made two versions and as you can see by my pic I cut the recipe in half to try out. 3 were made with Southwest eggbeaters, 3 with plain eggbeaters. in the southwest, I added diced cooked bacon (from breakfast that morning)and shredded cheddar cheese to 2 of them the third one got diced ham. to the plain 1 got diced ham and bacon, two got bacon and the plain also go shredded trader joes, Swiss and Gruyere cheese. put them in the fridge overnight and just had one of the plain ones for my late breakfast! YUMM! I can see many of these in many variations in my future. especially when we have guests. easy quick and I can enjoy the guests. Thank you so much for your great recipe!!
These came out very good. I added some chipotle Gouda cheese. Next time I will use a whole can of green chiles. Maybe a little cayenne pepper also.
I made 2 batches of these for a work potluck. I used turkey sausage, added a bit of milk for fluffiness, and topped them with shredded cheddar. Absolutely everyone loved them!
I left out the onions and Chile’s but added bacon bits. A touch dry. Could maybe use some butter or oil or other fat.
Came out really nice, excellent for on the run.
So good will be saving this recipes.
This is a super easy brunch dish. I also added some green chile for added flair.
I used this as a base recipe and added green onions, spinach, and some red peppers and some Mrs. Dash and it came out great.
Great recipe! I used a 4 oz can of peppers and 12 oz of mild Italian sausage..
I used sausage links, and added cheese. I also substituted green onion for white, and left out the salsa. It took longer to cook, but came out delicious! These are really filling. Hope they stay as good once microwaved!
If I make this again, I think that I would and much more spice, a little bland for my personal taste!
These are awesome because they're so easy to prepare ahead of time for a really fast, reheated breakfast. I added cheddar cheese and then wrapped each one in plastic wrap for easy microwaving to take to work.
This is a wonderful recipe to build on! I browned the sausage and sauteed chopped red peppers and I added green onion and cheddar cheese. I also used some heavy cream in my eggs so they got nice and fluffy. Sausage was already flavorful so I only used salt and pepper to taste. I also layered everything ...spoon full of sausage then veggies then cheese then poured in egg. This made a nice crust of the cheese and I could control how much egg (b/c I have some picky eaters)It took about 30 mins to bake. A big winner for my family!
It is easy to prepare. But I will add more flavors next time.
