  1. Cut sausage into 1/2" slices. Heat 1 tablespoon of oil in large non-stick skillet over medium-high heat until hot. Cook sausage 1-2 minutes per side or until lightly browned. Remove from pan and keep warm.
  2. Add remaining oil to pan with peppers, onions and garlic; cook stirring frequently until vegetables are tender about 7-10 minutes.
  3. Stir in cooked sausage, salsa and Italian seasoning. Bring to a boil, stirring constantly. Serve over prepared yellow rice.

This was so yummy! Pure comfort food. I was surprised at how flavorful it was since it has such simple ingredients. This is my new favorite way to eat smoked sausage! :)

Great recipe! I added homemade sofrito and used Goya Adobo seasoning instead of italian seasoning. Also added chopped cilantro at end for extra flavor.

OMG...awesome.I was a little uncertain, but LOVE it. only thing I did differently was add 3 jalapeño peppers and used basmati rice...wow, this one is a keeper!
