  1. Fill a pot with water and bring to a rolling boil over high heat. Once the water is boiling, stir in the tapioca pearls, and return to a boil. Cook the tapioca pearls uncovered, stirring occasionally, about 10 minutes. Cover and remove from heat, allowing pearls to rest for 30 minutes. Drain well in a colander set in the sink, then cover and refrigerate.
  2. Place mango and ice in a blender and blend until smooth. Divide chilled tapioca pearls in 2 tall glasses, then layer the mango mixture over and top each glass with a 1/4 cup of coconut milk.

Soothing and refreshing! I used the coconut from making the coconut milk in this. I will try making this with other fruit such as melons or peaches! Thanks for the recipe!

This recipe was not to my liking.

I found this drink to be really refreshing and great for summertime. It only yields two small glasses or one tall glass so increase the recipe as necessary if you're making for a crowd. I blende...

It is a good recipe. But the plain tapioca didn't do too well with my stomach. It seemed to turn out better if I mixed the mango and tapioca together instead of layering it.

You definitely need to add some sugar. Also for some reason, when I boiled the tapioca bubbles your way, they just became this congealed mass that looked and felt like fish eggs.
