Directions

  • In a large bowl combine fresh onion juice, olive oil, lime juice, saffron, salt and pepper. Mix in the cubes of chicken. Cover, and store in the refrigerator overnight.

  • The next day, slide the cubes of chicken onto skewers for grilling. Brush each side with melted butter.

  • Cook on the grill over medium heat until the chicken turns golden brown.

I love saffron and this recipe was divine. I served it with an herbed rice pilaf and it was super delish. I marinated overnight and suspect the longer it marinates the better it tastes. Helpful hint: I made the onion juice by chopping an onion and then squeezing the juice out with my potato ricer. It worked pretty well. Read More
