Quick 'n' Easy Carrot Slaw

"I've changed my Nana's original Southern carrot slaw recipe to be a little healthier, but it's still quick, easy, and delicious! Sometimes, instead of grating my carrots, after I peel them, I continue to use the peeler to make long strands."

  1. Mix the carrots, raisins, coconut, pineapple tidbits, mini marshmallows, yogurt, and cinnamon in a salad bowl, and refrigerate for at least 1 hour to blend the flavors. Serve cold.

Nice sweet dessert slaw. I used half sour cream, half yogurt. This did need a tad more sour cream/yogurt. I did plump my raisins with hot apple juice and drained/patted them dry before stirring ...

Very good snack, but I will leave out the marshmallows next time, their texture did not work for me in this.

Very good. I didn't have marshmallows but the salad was very good without them. I'm grateful for a carrot salad without mayo and this was perfect. I thought it might need some honey or stevia...
