I tried it and used half the sugar. It tasted like candy. I will make it again without sugar and add some onion to it. The cilantro and peanuts is an interesting touch.

Easy to make. I didn't have jalapenos, so I omitted them and added a dash of ground black peppercorns instead. The only changes that I would make next time are to add slices of red onion and slivers of carrots as the other reviewers suggested. Also, maybe a bit of purple cabbage for color and additional flavor and texture, and cut back a bit on the sugar. I am not a big fan of spicy foods, but next time I may be more bold and try at least one jalapeno. One note, the sugar never fully dissolved as the recipe states, although I gave it a fairly long and vigorous whisking. My friend who is visiting out of town (and is Thai!) said that she's never heard of or tried this recipe before, but gave it two enthusiastic thumbs up and had seconds, so as far as I'm concerned, it past the test!

hi, just wanna give u guys some ideas about what is go great with this salad. traditionally, we hv cucumber salad as a side dish for deep fried and barbecue dish. normally that main dishes r rich with flavors and oily, then sweet and sour of this salad will complete overall taste and keep the main dish from being too greasy.
This was fabulous with Curried Coconut Chicken(this web site).Didn't have fresh cilantro, used dried, let it mingle with other ingts. Didn't have peanuts, used toasted seasame seeds,didn't have jalapenos, used red pepper flakes, Awesome recipe,, however you tweek it.
I'm giving this four stars because the person i made dinner for liked this salad. For me, there was something a little off about it. One big mistake was adding salt to this. I added less than what's called for, and it was wayyyyy too salty. Rice wine vinegar already has salt in it. I'd say don't add any salt until you taste it, then add whatever amount you think it needs.

Found this salad delicious! A little soupy, but otherwise great! I was a little concerned because we only have sugar in the raw, which doesn't really dissolve, but it still added some sweetness and the rest just sank to the bottom of the bowl. Added a little crushed red pepper for some extra spice. Next time I would maybe add a few more veggies, but otherwise, very tasty!

Three stars for the way it was written.....then later I added some ingredients to the leftovers and it moved to four star. I added some radish, bean sprouts, a little sweet chili sauce, cashews, more cilantro and poured off some of the dressing - there was way too much.

Pretty good.... I prefer Adrienne's cucumber salad a *tad* better (both have a sweet-tart taste), but really enjoyed the uniqueness of this one. The jalapeno, peanuts and (especially) the cilantro were nice touches. My neighbor commented that she could barely taste the jalapeno tho (I agree). She asked what the green "thingies" were, and when I told her jalapenos, she was surprised. :) NOTE: DO NOT omit the peanuts. They may seem odd, but add an interesting texture (and taste!) that just can't be beat. Ditto for the cilantro. While I'm glad to have given this a try, I do not cook this type of cuisine often and therefore will probably not add this to my recipe box. Thanks for sharing, camp0433! :-)
I've made this a few times and it's always good. The first time I followed the recipe exactly, with good results. I've also made it with Splenda in place of sugar and it is equally good and much better for the diabetic in the household. I usually add an extra cucumber. A smaller batch is a good idea if you're planning to keep it for a few days, because it produces a ton of liquid once everything is combined, but you can always strain a little off. Draining longer in the salted phase doesn't work well because the cucumbers absorb more of the salt, but draining longer on paper towels is a good idea.

Love this recipe - SO easy to do - I substituted Splenda for the sugar and reduced the peanuts to about 2 Tbsp for the whole salad to cut down on the calories and it ended up being only about 50 calories per 1 cup serving. :) The ONLY thing about this recipe ... is it's addictive! I wonder - will you start turning green if you eat too many cucumbers, like turning orange eating too many carrots? Hee hee!

Loved it! To sweet for you? Kick up the heat! Very good combination of sweet and heat. I used Serrano pepper since I didn't have any Jalapeño in the fridge. Only used one. Its a keeper. I will be taking it to a salad luncheon in June with a warning label.

This salad was a big hit at a recent dinner I hosted. I did add some purple cabbage I had leftover and didn't put the full amount of sugar the recipe calls for. It turned out great and is a healthly treat
I have made this recipe twice now since finding it last week. It is quick and easy (and cheap). I follow the directions as written except I half the amount of sugar I add. Also, I know the jalapenos are in there but they don't pack much of a punch for me. Another reviewer mentioned that you need to make it up right before you serve it but I don't see the need. I kept it for three days in the fridge with no change really except the cilantro wilted just a bit. The cucumbers were still crisp and delicious. I do wait until serving time to add peanuts though. I used regular roasted, salt free peanuts and mix it in when I am ready to eat. Thanks for sharing, this one is a keeper!

This was so good. I ate almost the whole salad myself. Tried this recipe because I planted a garden and have so many cucumbers that I've been trying new recipes; also planted jalapeno peppers and cilantro. I did add a bit of shredded carrot for a little color. Will definitely be making this many times. Thanks for the great recipe.
I would rather give this a 4.5. I followed the directions and found the amount of sugar to be too sweet. I would cut that to half next time and add more according to your own taste.
This is the kind of salad that makes you want to suck the cucumbers to experience all of the taste. It is so good. I did lessen the amount of jalapeños a great deal--I used only half of one and it was plenty hot. Don't skimp on the cilantro. So good.

This IS heavenly! Out of this world flavor coupled with super easy prep work = a winner in my book! I did add shredded carrot and thin red onion slices as another member suggested in their review. I used the wrapped english cucumber, so no seeding was necesary. (thus making the recipe even easier). I also added a tad more chopped UNSALTED peanuts than called for. Yum!!
The peanuts were a nice addition, but not necessary. We love cucumbers anyway!

I went to a Thai restaurant and ordered the salad. Since then I had been trying to find the recipe and then I found this one, which is so delicious ! I will add sprout , tofu and pepper flakes next time. It just bursts with flavor. I definitely will make it again.

I didn't have peanuts so I I used a combo of pecans and walnuts, and served it with grilled pork tenderloin seasoned with garlic powder, onion powder, black pepper and seasoning salt. Yum Yum Yum the favors complimented each other amazingly!!!!
YUM! I didn't have peanuts so I used walnuts and added some peanut butter to the sauce. Didn't have cilantro so used basil and loveage. Forgot to rinse the salt off the cucumbers which was fine. I'm someone who usually only eats mild salsa and I would recommend only one jalapeno for my comrades. Also added red onion.
Easy recipe that tastes very authentic. I do add just a little water to the dressing though. If I don't have jalapeños, I use some red pepper flakes.

This was fresh, flavorful, and nicely crunchy. I reduced the sweetener (used 1/4 cup agave) and used pecans. It was pretty spicy, but not unbearably so. Nice and easy, too.
Delicious! I made a non-spicy version My two-year-old also enjoyed it with one modification: instead of jalapeno peppers, I used a red bell pepper.

I doubled the cucumber, jalapenos, and peanuts. Everything else I left as is, and I still had to drain off some dressing before serving. Some of the people at the party (myself included), had trouble stopping going back for more. It was great on its own until we found out it is amazing as a topping for a mixed green salad with citrus lime vinaigrette and cold lime shrimp! I love it, but would recommend cutting back the dressing if you are not going to increase other ingredients.
Loved this recipe! It's a refreshing summer salad. If want a spicer taste skip seeding the jalepenos. I made this recipe once with rice vinegar and once with white vinegar & tasted essentially the same (in case you don't have rice vinegar stocked in your cupboard).
Awesome flavors and a nice change to the normal salad. The amount of dressing left over was a bit much. When I make this again which I certainly will, I'm thinking 1/4 cup each of the vinegar and sugar instead of the 1/2's.
Very good! I was pleasantly surprised with this salad. I added a bit of crushed red pepper for a bit more spiciness and for color. Thinly sliced red onion would be great.
This was very good, but the dressing is too sweet and liquidy. The next time I make it, I will use less vinegar and sugar probably cutting it to half or even more. It is a keeper. Our guests liked it.
I love this salad! My favorite Thai restaurant always serves their satay with this salad. Making it at home I usually leave out the sugar. Sometimes I use honey roasted peanuts though and it's a great variation.

There is another Thai Cucumber Salad on this site that I gave 5 stars to. This was OK.
Excellent as is! But on a personal preference, I do step 1 as directed, then I marinate all ingredients, except peanuts, for several hours. Discard the dressing and then add the chopped peanuts. I think doing it this way, it's not as sweet tasting.
This has become a family favorite! The sweet and tangy flavors even get my picky 6 year old fighting for the last "cuke" in the bowl!
I made this for a pot-luck, and it went fast; I almost didn't get a taste! At first I thought the rice vinegar/sugar dressing was rather bland, so I added a tablespoon of chili paste with basil leaves, which you can get at an asian grocery store. I also added sliced red peppers and crispy rice noodles to the salad, and it was wonderful! This is my new favorite salad recipe.

Make this and paired it with a peanut butter chicken, let's just say fabulous!!!! I used baby cucumbers instead and that gave it just the right crunch.
Made this for 4th of July. It came out great. I didn't use as much sugar about 1/3 less because I like more sour than sweet which worked out nicely. I also added some sliced carrots.
This was better than I imagined. To save on time I threw everything but the cucumbers in the food processor. I also used banana peppers because I didn't have jalepenos. Absolutely awesome. I'd like some serving suggestions though!

Made this recipe just as is...excellent...it did make a bit of juice so I put the prepared cucumbers on a bed of lettuce and used some juice as dressing...also very tasty on cooked and cooled that noodles...the possibilities are endless..thank you camp0433 for this delicious recipe!
So easy and delicious. Our local favorite Thai restaurant serves something similar for an appetizer. This tastes just as yummy! My jalapeños were large so I only used one and finely diced it, still plenty hot for my guests.
