Directions

  • Place the chicken pieces into a large resealable bag and pour in the marinade. Marinate in the refrigerator for at least 1 hour or up to overnight.

  • Preheat a grill for medium-high heat. When hot, lightly oil the grate. Remove the chicken from the marinade and discard the marinade.

  • Grill the chicken pieces until cooked through, about 10 minutes, turning once. 5 minutes before they are done, place the pineapple rings on the grill and cook for a couple of minutes per side. Place the pineapple slices on top of the pieces of chicken and top with a slice of cheese. Close the lid to the grill and allow the cheese to melt for a minute. Toast the buns, if desired.

  • To assemble the sandwiches, place the chicken, pineapple and cheese onto the bottom buns. Top with lettuce and tomato. Spread the thousand island dressing onto the top buns and place onto the sandwiches.

I used this as a base recipe and added my own touches. I pounded the boneless skinless chicken breasts between two pieces of saran wrap to make them tender and less thick. I used my fav. teriyaki sauce to marinate and I also sauteed some sliced mushrooms then added some sauce to the mushrooms. I grilled the chicken on wood chunk briquettes (the smoky flavor was amazing). I use swiss or provolone cheese and grill the pineapple per the recipe. I used plain mayo instead of thousand island. My sister suggested to use chipoltle mayo to add a little kick. I may try that next time. Great recipe to add your own touches to! Read More

These were really good but I did make some changes....I skipped on the tomatoes and lettuce (the sandwich is already juicy from the pineapple). Also I didn't have any onion rolls so instead I used sesame rolls and then added onion strings to the sandwich(I really recommend this addition). Also I'm not a fan of thousand island dressing so I used dijon mustard and instead of the provolone I used muenster jalapeno cheese! I realize that this is a lot of changes but I just made it according to what I had in the refrigerator and my BF and I loved them! Read More

I think that the 1000 Island dressing would have to be a personal taste - not one that appeals to me. BUT I do recommend trying Swiss cheese with the chicken burger! A local restaraunt here uses Swiss on their chicken/pineapple burger and it is DELISH! Something so good about the swiss and the pineapple together. Trust me!!! Go reg mayo though! Read More

This recipe was a hit. Didn't use thousand island used chipotle mayo like another user suggested. Made my own marinade with pineapple juice soy sauce garlic and onion powder since I couldn't find commerial marinade. Used the frozen breasts and marinaded them overnight. Read More

I'd been looking for some time to duplicate a sandwich my husband and I first had while on vacation in Florida a few years ago. This is the taste we remember we both love it. The Thousand Island dressing makes it great. We like using a soft bun. If you can't find Hawaiian marinade I've had to use a sweet and sour dressing for the marinade and it came out great also. As I make this again today I realize I didn't write previously that I pound the chicken to all one thickness so it cooks more evenly. Also I find with some chicken breasts they are just too big often I can make two sandwiches out of one chicken breast. Read More
