View All Saved Items Rate Print Share Share Tweet Pin Email Add Photo Prep Time: 1 hrs Cook Time: 10 mins Total Time: 1 hrs 10 mins Servings: 12 Yield: 12 fish burgers Jump to Nutrition Facts Ingredients 1 (15 ounce) can mackerel, drained 1 (12 ounce) can tuna, drained 1 (15.5 ounce) can white hominy, drained 2 eggs 1 tablespoon olive oil 1 orange bell pepper, seeded and chopped 10 jalapeno peppers, seeded and chopped ½ large onion, minced 1 tablespoon jarred minced garlic 12 pitted prunes, finely chopped 1 teaspoon sea salt ½ teaspoon ground black pepper 2 tablespoons crushed red pepper flakes 1 cup seasoned (Italian-style) breadcrumbs 24 slices whole wheat bread 1 cup honey mustard 24 leaf lettuce - rinsed, dried and torn into bite-size pieces Directions Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and lightly grease. Mash together the mackerel, tuna, and hominy in a large bowl until blended. Add the eggs, olive oil, orange bell pepper, jalapeno pepper, onion, garlic, and prunes. Season with salt, black pepper, and red pepper flakes. Stir until evenly combined, then fold in the bread crumbs. Form into 12 patties, and slightly flatten between your palms, place onto the prepared baking sheet. Bake in preheated oven until hot and lightly browned, about 10 minutes. While the surprise burgers are baking, toast the whole wheat bread, and spread with honey mustard. Place a lettuce leaf onto the mustard side of the bread. Place each burger between two slices of bread to serve. Serve either warm or cold.
