  • Preheat oven to 320 degrees F (160 degrees C). Lightly grease a 9-inch pie plate.

  • In a large glass or metal bowl, beat egg whites until soft mounds form. Gradually add sugar and baking powder while continuing to beat. Whip whites until stiff peaks form. Fold in crushed crackers, vanilla, and walnuts. Pour mixture into greased pie plate.

  • Bake in preheated oven for 20 to 25 minutes. Cool before serving. Garnish with whipped cream.

My grandmother used to make this and gave me the recipe. They served it also at the old Wyatt's cafeteria (in Houston Texas) years ago. But the recipe contained 1 c. pecans instead of black walnuts and was topped with unsweetened vanilla flavored whipped cream (no sugar needed with the sweet pie underneath). Excellant! Read More

My Mom didn't enjoy baking and this was one of the few desserts she made fairly frequently - always with Ritz crackers. It's fool-proof -delicious and so great with real whipped cream! Read More

This is NOT the Mock Apple Pie that one reviewer commented on. That is another pie made with Ritz crackers that uses all the apple pie flavors:cinnamon sugar etc that make it taste like that. This pie is totally different with almost a chewy brownie-like texture because of the egg whites and nuts. My mom made this pie back in the 50s/60s and it has always been my favorite. We called it Ritz Cracker Pie for the obvious reasons and I continue to make it often. There are the doubters who give me a dubious look when I mention the name... until they try it!! 7.2.20 This is the second cracker pie recipe I’ve tried on this site, and this one definitely is better than the first in EVERY respect. This basically is a non-crust pie comprised of meringue, crackers, and nuts. The crackers definitely added something to the firmer consistency, but the dominating flavor really is the nuts. If walnuts are not your favorite, would recommend trying another type of nut, such as pecans (that’s what I’d used if I made this again). Cracker pies don’t have a whole lot of eye appeal, but they are super simple to make, they bake up quickly, and they taste pretty good. Read More
