- Preheat oven to 350 degrees F (175 degrees C).
- Heat the canola oil in a large skillet over medium heat. Add the chicken, garlic and onion; cook and stir until onion is tender. - Transfer to a greased 9x13 inch baking dish. Sprinkle cheese and olives over the top. Cover with aluminum foil or a lid.
- Bake in the preheated oven for 40 minutes. Uncover and bake for and additional 15 minutes or until heated through and cheese is melted. Let stand for 5 minutes before serving.

This was an excellent Mexican casserole. I didn't have enough tortillas so I crushed some tortilla chips and mixed with the cheese. It made a crispy top that my kids enjoyed.
