  • Preheat oven to 350 degrees F (175 degrees C).

  • In a medium bowl, cream together the white sugar , brown sugar and butter. Stir in the eggs, one at a time, and vanilla. Combine the flour, rolled oats, baking powder and baking soda, add to the sugar mixture and mix well with your hands to form a dough. Mix in the coconut last.

  • Drop cookies by teaspoons onto an unprepared cookie sheet and bake for 8 to 10 minutes, in the preheated oven. Cookies will turn golden brown. Remove to cool on baking racks.

My boys love making these cookies and enjoy them warm with a bowl of ice cream. Co-workers request them for our office parties!!!!!!! These aren't very "sugary" so if you would like to add more sugar in the dough feel free. We like them just the way they are. Read More

They are not sweet enough. made the second batch adding a small amount of granulated sugar to the remaining dough and sprinkled sugar on top of the cookies before putting them in the oven. They taste okay...not something I would make again. But thank you for sharing your recipe! Read More
