Unlike other reviewers, I didn't find this to be cake- or bread-like. Nor did I really find it to like a bar cookie. This is sort of in a category by itself. I sprinkled it with mini chocolate chips and powdered sugar and it is very good.
It was undercooked. 30minutes isn't long enough. The middle was somewhat gooey and baking it for another 10-15minutes would of been perfect. Otherwise, it tasted really good.
Outstanding! The texture and flavor were both just perfect. I didn't have cloves so for the spices I used 1.5 tsp cinnamon and 1.5 tsp pumpkin pie spice. The cooking time required an additional 15 minutes or so. This is by far my new favorite pumpkin treat!
I’ve made these numerous times. Probably the cause of at least 10# of weight gain. To say they are amazing would be an understatement! Must try!!!
Easy to make tasted just like pumpkin pie without the crust
It was a hit. The kids and everyone loved it. I topped it up with whipped cream and cinnamon. I made my own pumpkin purée with the inside of the pumpkin I was emptying to carve. Will do again. Thanks.
This is an easy recipe for making a moist, flavorful cake. Someday I may try the variations to make it come out like bars, but as is this is such a nice, change of pace dessert to serve anytime.
This cake was very moist and great flavor. I made a cream cheese frosting(recipe from allrecipe) and sprinkled fall leaves. It was a big hit!
I also followed the advice to use less oil. They were a huge hit. Great texture and taste
I've been making these for about 30 years now, except I don't use salt. Always bake them in a 12x18 or TWO 9x13. Not one person has ever NOT liked them and they are DANGEROUS! I usually eat half the pan myself, thus why I try not to make them too often.
I ran out of oil so melted some butter, then I ran out of sugar so I had to use honey. These were delicious and I used homemade pumpkin puree because one cannot get tinned pumpkin in Australia.
I don't read reviews until after I have made the recipe AS WRITTEN so I'm not influenced by others' opinions, swaps, and substitutions. I read through this recipe and between the picture and the description ("squares," "bars") I was expecting something much denser and more brownie-like than what we got. FOR THAT REASON, I am giving this recipe just three stars - "It was OK" for the recipe it's meant to be. As a PUMPKIN CAKE? It's delicious - moist, fluffy, and flavorful. Now that I've read the reviews, I see that others are of the same opinion - that it's much more cake-like than bar-like in a 9x13 pan.
