Original recipe yields 1 servings (1 burrito)
- Warm tortilla in microwave for approximately 15 seconds.
- Whisk together egg and egg whites in a small bowl.
- In an 8-inch skillet that has been sprayed with nonstick cooking spray, pour egg mixture and scramble. Season with salt and pepper and put aside.
- On first third of tortilla, spread a thick layer of black bean puree. Next, layer on the scrambled eggs. Place the sausage on top of the scrambled eggs. Then layer on the pico de gallo, lettuce, and avocado. Sprinkle with cheese. Fold together. Top with sour cream.
