I'm sorry...I can't actually give this recipe any stars...and I was SO excited when I found it. Very dry and you can't taste the peanut butter at all, just taste like plain muffins. I can't even think of a way to jazz them up.

If altered just a bit, these are hearty and good:-). I could tell from the recipe that these would end up pretty bland, but liked the idea less sugar and not as many calories. I simply added some homemade low-sugar peach jam to the center of the batter in each muffin before baking to give it more flavor....more on the line of a peanut butter and jelly muffin. I also replaced half the flour with whole wheat to make it a bit more healthy and hearty. Using brown sugar just in the batter or honey helps with dryness.
