Mormor's Randiga Salad

"This is a very quick and easy salad to make. The name is Swedish; it literally means 'Grandmother's Striped Salad.' It's 'striped' because the ingredients are colorful and julienned. My grandmother and I created this salad about 15 years ago so the measurements are estimated. Just use as much as you need or want."

  1. Place eggs in a saucepan, and cover completely with cold water. Bring water to a boil. Cover, remove from heat, and let eggs stand in hot water for 10 to 12 minutes. Remove from hot water, and cool. Peel and chop.
  2. Combine the lettuce, bell peppers, beets, egg, cucumber and carrots in a large bowl, or in individual bowls. Toss, and serve the dressing on the side.

A very delicious and satisfying salad! I enjoyed the easy preparation almost as much as eating it!

This is a very different salad for me, with the beets in it, but wow was it ever good!! I will definately make it again ;-)

I loved this recipe, although I confess I didn't even add the dressing - I like my salad plain. I would also add more egg next time, it was rather overpowering. Made it as a side dish for pork...

This salad was delicious and easy. My friends loved it and went back for seconds. I served it with Dale's Swedish Meatballs.
