Cucumber Salad with Rice Vinegar


A simple cucumber salad with rice vinegar. No oil is used in this cool and refreshing summer salad made with cucumbers, red onion, and rice wine vinegar.

  • 2 cucumbers, peeled and thinly sliced

  • ½ red onion, thinly sliced

  • 1 ½ cups water

  • ½ cup rice wine vinegar

  • 1 teaspoon white sugar

  • ¼ teaspoon seasoning salt


  1. Combine cucumbers and red onion in a salad bowl.

  2. Stir together water, vinegar, sugar, and seasoned salt in a small bowl. Pour over vegetables. Chill for 1 hour.

  3. Serve chilled or at room temperature.
