Easy Zucchini Cobbler

What a great recipe especially since we have a garden plentiful with zucchini! Both my husband and I loved this recipe and have made it twice in a month for different functions. It was hard to believe that it was made with zucchini and we still have some disbelievers. The only changes I made is that I used 3 cups of flour and added 4 packages of instant oatmeal-maple & brown sugar flavor. I also added a little corn starch to the heated lemon juice to thicken the cooked zucchini. I also added more zucchini! Thanks for sharing such a delicious recipe.
