  • In a mixing bowl, cream butter and sugar until fluffy. Add eggs, one at a time, beating well after each addition. Blend in potatoes and vanilla. Combine flour, cocoa and baking soda; add alternately with milk, blending well after each addition. Stir in nuts. Pour into a greased 13-in. x 9-in. x 2-in. baking pan. Bake at 350 degrees F for 40-45 minutes or until cake tests done. Cool on a wire rack.

I loved this recipe. I am in advanced Culinary a my high school, and had to make something creative with potatoes. I used sweet potatoes and OMG, I loved it. My class did too. I had people in my class wanting more and more. And I used the cream cheese frosting II with it, with a few alterations. You can check my review for the alterations. Great recipe. Before I decided to make real of this recipe, I went through most of the reviews raving about this. As good as expected, the texture of this cake turns out incredibly well-moistured and soft. However, the reason why I had taken a star away is that it is TOO SWEET. Instead of 2 cup sugar, please only make it 1 or 1.5 cup, especially for those who don't like overly sweet food. Read More

WOW!!! OK so I love potatoes and ? love cake but would never in a million years think to put them together! So when I found this recipe I was skeptical for a second then remembered a neighbour lady who made a chocolate cake with mayonaise and then I remembered one with tomato soup too so I thought what could potatoes hurt? Well I made this cake today for my husband's birthday and we both loved it! Very moist and yummy.
