- Puncture squash several times with a knife or fork; place on a microwave-safe plate. Cook on high for 5 minutes. Cut into quarters; remove seeds and pulp. Return to plate, cut side down, and cover with waxed paper; microwave on high for 7 minutes. Turn over; microwave on high for 6-8 minutes or until soft. Scoop out squash and place in bowl; add remaining ingredients and mix well.

This was very good. I didn't have OJ concentrate, so I used 3 tablespoons of regular OJ. I also baked the squash in the oven on 350 for 50 minutes.
Really good and really easy. I brought it to a family-dinner and they loved it. I'm not a personal fan of the texture, but that's just the squash in general. The taste is marvelous!
I made this for Christmas dinner and everyone loved it - even the ones who are not big on vegetables were intrigued with the blend of flavours. Will definitely make this again.
Yummy. It was hard to convince my head that this wasn't going to be sweet when I put it in my mouth. The light citrus flavor was yummy. I'll make this again.
