I absolutely loved this, which served as the base for a salad I made for a large group of people. I did not use Romaine (only spinach) and did not include the onion either. I substituted dried sweetened cranberries for the raisins and added a delicious caramelized almond (just sugar & almonds in a pan, and the sugar melts onto the almonds and caramelizes - I used a 10 or 12 oz package and 1 cup sugar). This salad was delicious!!! I served it at a birthday party and everyone just raved about it! I replaced the raisins with whole red grapes, which added a wonderful flavor. I also offered sliced roasted almonds and bleu cheese crumbles as toppings, and both accent this salad beautfully! Instead of making the dressing I used Emeril's Rasberry Balsamic Vinegrette and put a little bit in the bottom of the bowl to flavor and preserve the apples, raisins and onion. At the last minute I put the rest of the dressing on the salad and tossed. All my guests loved it. Read More

Every ingredient played a wonderful part and the dressing is delightful. I added poppyseed (for no particular reason), color contrast I suppose. Thanks Darlis, I will continue to bring this to the dinner table. Thumbs up from everyone. UPDATE: I have made this salad 5 times since I found the recipe 7 days ago. I used 1 Tablespoon of light olive oil, added about 1 Tablespoon of blue cheese, used grapes instead of raisins and 3 cups of spinach (didn't have any romaine) The hubby loved it and even my son who doesn't eat anything ate it. I will definitely make again Read More

YUM! I used all spinach and subbed craisins for the raisins. I recently made the Spinach Salad Supreme(made with bacon and hard boiled eggs) also from this site. I prefer this Spinach Apple Salad because it takes less prep time and is healthier. Both recipes are good but if I want to make a spinach salad again I will go with this one.
