- In top of double boiler, heat 2 cups milk to a gentle boil. Stir in rice and salt. cover and cook over medium-low heat 45 minutes, stirring occasionally. remove from the heat; set aside. In a saucepan, heat 1/2 cup brown sugar, butter and remaining milk until simmering. In a small bowl, beat egg yolks. Add small amount of hot milk mixture to yolks; return to pan. Stir until smooth. Stir into rice mixture; cook and stir over medium heat 5 minutes. Remove from heat; stir in vanilla. Pour into a greased 1-1/2-qt. baking dish; set aside.
- In a mixing bowl, beat egg whites until soft peaks form; gradually add remaining brown sugar, beating until stiff peaks form. Spread over rice mixture, sealing edges. Bake at 300 degrees F for 20-25 minutes.

This is very yummy! I had leftover steamed basmati rice to use up, so I tried this recipe. Even without cooking the rice in the milk, it was great. It was hard to spread the eye white mixture...

this just did not work for me, i didn't like the flavor, the texture, was really sweet...just not for me

Well worth the time and effort. Rich creamy, and just WOW!!! Even my picky 6 year old wouldn't stay out of it!

this just did not work for me, i didn't like the flavor, the texture, was really sweet...just not for me

I made this pudding using arborio rice. and whole milk. The flavor & consistency of the rice pudding is very good. However the meringue topping did not add anything. I would make the pudding ...

Recipe produced a decent pudding but butterscotch flavor did not come through for me. It was good nonetheless. I liked the meringue topping and felt it added a unique touch to this classic dish.
