  • In a mixing bowl, cream butter and 1 cup sugar. Add egg; beat well. Combine buttermilk and vanilla; set aside. Combine flour, baking soda and salt; add alternately with buttermilk/vanilla to the creamed mixture. Stir in rhubarb. Spread in a greased 13-in. x 9-in. x 2-in. baking pan. Combine the remaining sugar with cinnamon; sprinkle over batter. Bake at 350 degrees F for 35 minutes or until cake tests done. For topping, combine all ingredients; pour over individual squares.

I will definately keep this recipe - the only change I would make is add at least another 1/2 of rhubarb - we would like a more equal cake to rhubarb ratio, and I did a stresual topping - the crunchy topping was delicious on it! Read More

This came out great, dont be afraid to use all the cinnamon topping it looks a lot before you cook it. I replaced 1 cup of sugar with three very rip banana's and served it warm with milk as a topping. Very healthy and very good. My three year old is on her second bowl. Read More

We will definitely make this again. This cake was very easy to make. You could really taste the rhubarb and the cake was just sweet enough. I followed the recipe exactly. We even forgot to make the sauce and it was very tasty without. Thanks for sharing! Read More
