Asparagus Tomato Salad

"This is my husband's favorite asparagus recipe. All of our children love it, too. It's perfect for a summer dinner."

  1. Cook asparagus in a small amount of water until crisp-tender, about 3-4 minutes; drain and rinse with cold water. Place in a large bowl; add the tomatoes, mushrooms and green pepper. In a small bowl, combine remaining ingredients; mix well. Pour over vegetable mixture; toss to coat. Cover and refrigerate for 2 hours or overnight.

I tossed the asparagus, yellow pepper and mushrooms in a grill pan for 3 minutes before tossing with dressing and tomatoes. Only a pinch of salt. The small amount of hot sauce makes the dish.

Liked the combination of vegetables but the dressing was just not right for us. Will try again with different dressing.

Loveee this recipe! Very good salad for a BBQ we had that was all vegetarian. Yum!

The best salad ever!!! That says it all. Dinner was a fabulous success tonight. I made this after breakfast, so it had all day to soak in its goodness before dinner.

What a great recipe! I haven't changed anything since I'm still learning... But it tastes awesome with all the ingredients! ;) One of my favorites for sure.

Good salad I will leave out the mushrooms next time because they turned brown and mushy but otherwise it is worth making again
