Baked Oatmeal Squares

I am from Amish country and this recipe needs a little revising. First of all, the oats should NOT be quick-cooking, but can be used in a pinch. Definitely increase the oats to 1 3/4 cups, use only brown sugar (not white), add 1/2 tsp. vanilla and a dash of nutmeg. After mixing, allow to set a few minutes so that the oats can absorb some of the liquid, then pour in baking dish. The nuts and raisins are optional. This is fabulous plain, but ,you can add raisins, grated apple, dried cranberries, chopped or sliced nuts, etc. This is so good you will want to double the recipe and use a 9x13 dish. Serve hot with a little milk (or a lot) poured over squares. Can be made ahead of time. Put individual portions in baggies and freeze.
