Baked Oatmeal Squares

The something different for breakfast I was looking for. I never had baked oatmeal and would describe this as a soft delicate oatmeal cookie that is cakeylike. I used buttermilk and only 1/8 c. raw sugar and the taste was wonderful, so much better than oatmeal made the traditional way. Since so many reviews stated they were crumbley I baked until just set and that was at 20 minutes for me. I would say they are delicate as oppossed to crumbley and I have no problem cutting mine into bars when they are cooled and they cut even better when the leftovers are refridgerated. They are delicious warm or cold and the recipe can be altered to taste and preference such as applesauce for oil, egg whites for whole egg, buttermilk for milk, brown sugar for part or all of white sugar ... you get the idea. You can eat as a bar or broken up in a bowl with milk. Either way a winner! and a great snack too.
