  1. In a large bowl, combine flour, sugar, poppy seeds and baking powder. Combine eggs, milk, applesauce and lemon extract; stir into dry ingredients just until moistened. Fill greased or paper-lined muffin cups about three-fourths full. Bake at 350 degrees F for 30-35 minutes or until muffins test done.

My daughter cut the sugar by 1/2 C, used half the amount of poppyseeds, and made these in my larger muffin tins. These were not sticky at all (?) and I could really taste the lemon. She say's "...

if there were a NO star rating this would be useful. not only were there too many seeds-the extract flavor instead of real lemon I did not care for. i dont like to switch up or change ingredient...

These were very good. The lemon and poppy seeds work very well together, and you'd never know this is a low-fat muffin. These all vanished quickly. Thanks for sharing the recipe!
