New Orleans Brunch Eggs
My husband and I don't have any family nearby, so we often invite friends over for special weekend brunches. Of all the dishes I serve, guests seem to like this the best.

This was a nice meal. I had an open box of chicken stock in the fridge so I used that. As I was making the sauce, I kept wanting to add a splash of milk, but I didn't. Next time I will...
Read MoreThis was different. The beef broth just didn't seem to go with the eggs. I probably won't make this again.

I used Canadian bacon instead of ham. I didn't even notice the flavor of the beef broth, to be honest. This was good but not something I would want on a regular basis. Thanks!
Outstanding! I'm not too good with hot hot hot even thought I love it, so I cut the cayenne a bit. Other than that I made no changes. It was lovely for Mothers day brunch :) This is a great easy recipe. thanks :) UPDATE: a great recipe and VERSATILE - the skys the limit here.
Pretty good but not spectacular. Not sure it'd be worth it just for me but it was interesting so I might try it again. It required 3 pans so that everything could be cooking, and the sauce got done too soon and ended up more as a gloppy lump than a sauce. And I didn't notice the beef broth flavor either. (I also want to know why I see Caroline with her two cats everywhere I go. :-) Gotta love anyone with cats and who plays games.)
