Creamy Citrus Salad

- In a large bowl, dissolve gelatin in boiling water; stir in orange juice concentrate. Cool until partially set. Fold in oranges and pineapple. Pour into an oiled 13-in. x 9-in. x 2-in. dish. Chill until firm. In a small bowl, beat milk and pudding mix for 2 minutes; fold in cream. Spread over gelatin. Chill for 30 minutes.

This was something my mother always made when I was growing up. It is one of my favorite refreshing desserts. I love it.
This is light and refreshing and has just a subtle taste of lemon. I did find it doesn't thicken up as much as I had hoped so getting it out of the pan neatly was out of the question. The puddin...
