  1. In a 2-qt. microwave-safe casserole, combine carrots and apple juice. Cover and microwave on high for 10-12 minutes or until crisp-tender, stirring once. Add butter, brown sugar and salt if desired; toss to coat. Sprinkle with parsley.

This was an easy delicious recipes. Even the three year olds loved it!! We didnt have a ton of time to prepare it, so we just bought two one-lb. bags of baby carrots.

It took a while to cut up that many carrots (I'm a lazy gal) but worth all the effort. It's so quick and easy. I had to be at a family gathering at 7p.m. So I started cutting up the carrots at 6...
