  1. In a bowl, combine the flour, sugar, baking powder, salt and pepper. Beat eggs and milk; stir into dry ingredients until well mixed. Stir in ham, cheese, bacon and onion. Fill well-greased muffin cups three-fourths full. Bake at 350 degrees F for 45 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing to a wire rack.

These need a little tweaking in my opinion. They were good, but a little bland. I think I would maybe saute the onion and add a little ground mustard or some herbs to add a little flavor.

A good quick portable breakfast and a new way to use up leftover easter ham. I really enjoyed these, but they need a bit more seasoning. Some fresh herbs might do the trick.

THIS WAS AMAZING!!! I MADE 12 VERY LARGE MUFFINS AND THEY RAISED NICE AND HIGH, AND I COOKED THEM FRO ONLY 30 MINUTES AND THEY WERE PERFECT WHEN COOLED. THANKX VERY MUCH

Excellent! I didn't have any bacon so I doubled the ham. Also left out the onions. Very moist and tasty!
