  1. In a skillet, saute the peppers, garlic and Italian seasoning in butter until peppers are crisp-tender, about 5 minutes. Add tomatoes; cook for 1-2 minutes or until heated through. Sprinkle with croutons if desired.


  • Nutritional Analysis: One 1/2-cup serving (prepared with margarine and without croutons) equals 52 calories, 38 mg sodium, 0 cholesterol, 6 gm carbohydrate, 1 gm protein, 3 gm fat. Diabetic Exchanges: 1 vegetable, 1/2 fat.

Basic recipe but use it as a base. I wouldn't really consider the name of this recipe to be correct. I added other veggies and left out the croutons.

This was not bad. I think that next time I will add some zucchini as only having peppers and tomatoes it does not feel complete. The flavors were good, it was just missing something.
