  • In a bowl, combine flour, baking powder and salt. In another bowl, combine egg, milk, oil and syrup; stir into dry ingredients just until blended. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown (pancakes will be thin).

We enjoyed this recipe. I had read some reviews that complained of these pancakes being tasteless. I took that into consideration and decided to cambat that by increasing the salt by a "pinch", adding a 1/2 tsp of pure vanilla extract and also adding a tbsp of sugar. I also used melted butter instead of the veg oil. They were really good, not tasteless at all. They cooked up nicely but after the batter had a chance to rise a minute, they puffed up even better. Altogether, a pretty good basic pancake recipe, I might try adding some diced fresh strawberries next time. : ) Read More

I added a tbs of sugar, tbs of vanilla and tbs cinnamon. They came out perfect, nice and fluffy. I would add fruit next time for added flavor. Read More

Very easy. I followed some sugestions from others the second time around. Cut the oil in half. Double the maple syrup. If you want a more filling, stick-to-your-bones meal, spread peanut butter over them with some syrup. Try it, promise its good! P.S. If you want super fluffy pancakes cut the milk down a 1/4 cup and replace it with club soda. The carbonation fluffs them up. Read More

After reading the other reviews, took the advice on switching the oil to butter... last time i didn't and they were a lot runnier. also, added a couple of other bits to make them much thicker: so really, you should make your own nut butter (my housemate and I blended walnuts and a few mixed nuts and it's the greatest spread ever), and when you got it, glop a couple spoonfuls into the batter; then slice up a banana and whisk it all together. Other variations (due to what was around): using whole wheat flour, obviously not for the gluten free folks, using soymilk (if you can afford it hempmilk, or again-- make your own!) which matches the nut-butter consistency really well, and adding a tablespoon more of maple syrup. The pancakes came out thicker, and since the batter was heartier, they seem to cook more evenly and didn't stick to the griddle as much. You won't need to put anything on them afterward, because after three or four of these babies you're gonna be tripping the food coma scene. And always, experiment... i like to mix things of similar consistencies: sweet potato glop (leftovers from thanksgiving?), mashed potatoes, breadfruit, avocados (eat immediately as they don't store well)... etc. In short, best birthday breakfast I've ever cooked!
