  1. In a large skillet or wok, combine the water, soy sauce and oil. Add the zucchini, cabbage, mushrooms and onion; stir-fry for 4-5 minutes or until crisp-tender. Add the rice, tomato and carrot; stir-fry for 2-3 minutes or until heated through. Sprinkle with almonds.

Surprised at how good this was. Did not have any almonds, and used left over bagged slaw mixture in place of carrots & cabbage. Also added broccoli instead of zucchini! Good stuff!

Add fresh ginger, a little teriyaki, and cut the carrots instead of grating them. Yummmm.

I was surprised at how good this was! Throw in some chicken and you have a main course.
