Blueberry Mini Muffins

  1. In a mixing bowl, cream butter and sugar. Add eggs, buttermilk and vanilla; mix well. Combine flour, baking soda, baking powder and salt; stir into the creamed mixture just until moistened. Fold in blueberries (batter will be thick).
  2. Fill greased or paper-lined miniature muffin cups with about a tablespoon of batter. Sprinkle with sugar if desired. Bake at 400 degrees F for 10-15 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

YUCKYUCKYUCK! Ihave made dozens of different kinds of muffins and this had to be the worst blueberry muffins i ever had. They were dry and very bland. The farm animals will eat them.... i hope.

These were great, i also used frozen. I would add maybe more liquid cause they were somewhat dry. Even so they were very delicious

I decided to make these full size muffins and it came out to be about 3 dozen. They were a bit dry compared to other recipes.

I also added some extra buttermilk. They are great -- Perfect for my sons preschool class.

Made them the other day, GR8 flavor and hubby loved them, he is hard to please. Were a tad dry, but will make them again and again. Thanks S for sharring your recipe.

These were great. I baked them for 10 minutes in mini muffin tins and they were moist and not overly sweet. A new favorite!
