  • In a mixing bowl, cream butter and sugar. Beat in egg and vanilla. Gradually add flour. Fold in the potato chips and pecans. Drop by tablespoonfuls 1-1/2 in. apart onto ungreased baking sheets. Flatten with a fork. Bake at 350 degrees F for 12-14 minutes or until golden brown. Remove to wire racks to cool.

They tasted great and looked even nicer and tasted better with melted chocolate chips drizzled on them. I was looking for a way to use up my potato chip crumbs and saw that the only person who rated this recipe hadn't even made these cookies. So I just had to try them so I could rate it. I tried 2 recipes today and this was the better one. I drizzled them with chocolate as the picture showed. I also added some coconut, once I tasted them. My favorite recipe would be the Potato Chip Cookies VI. They are the closest to my mom's, sweet, crunchy and full of flavor. Read More
