Sweet Potato Apple Salad

Made this last nite for a BBQ and it was a hit! I made a few changes: skipped the chopped onion since the green onions I had were large, added raisins, diced celery, and sunflower seeds. Yummy! Next time I make it I'll reduce the amount of olive oil though. I made the dressing the night before and tossed everything together a couple of hours before serving and the flavors blended perfectly.
