Sponge Cake Cookies

  1. In a mixing bowl, cram butter and sugar. Add eggs, one at a time, beating well after each addition. Beat in extract. Combine flour and baking powder; gradually add to the creamed mixture.
  2. Drop by teaspoonfuls 3 in. apart onto ungreased baking sheets. Bake at 400 degrees F for 6-8 minutes or until the edges are lightly browned. Remove to wire racks to cool.
  3. In a mixing bowl, cream butter, sugar, extract and salt. Add enough milk to achieve spreading consistency. Tint with food coloring if desired. Frost cooled cookies. Sprinkle with coconut if desired.

My family doesn't enjoy icing so I made these cookies plain and also in some of them, I added dark chocolate chips and macadamia nut slivers. The cookies were suprisingly like lemon spongecake....

These cookies were awsome! Allthough i got the recipie from the original book.

I thought these were really good with a cup of coffee! I made mine a little bigger than suggested and (by mistake) added 1/2 the amount of coconut into the frosting rather than putting it on top...

Old recipes are generally the best, tried and true, and this one is great. I have been looking for new recipes, and I was pleasantly surprised by this one!

The frosting and the minuature cookie cakes are really good and lemony. Good for people who like lemon sponge cakes.
