Frosted Peanut Cookies

  1. In a mixing bowl, cream butter and brown sugar. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and baking powder; gradually add to the creamed mixture. Stir in oats and peanuts.
  2. Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350 degrees F for 10-12 minutes or until golden brown. Remove to wire racks to cool.
  3. In a mixing bowl, combine frosting ingredients; beat until smooth. Frost cooled cookies.

I used raw peanuts, and these turned out fine! I had to add more soy milk to the frosting to make it thin enough to spread. Wonderful cookies!

I didn't pay close attention to the recipe until I was actually in process of making these cookies. Only then did I notice there wasn't peanut butter in the actual cookie, only in the frosting. ...

I loved this! I used unsalted peanuts instead of salted ones and it turned out great!
