Alfredo Potatoes

  1. Pierce potatoes several times with a fork and place on a microwave-safe plate. Microwave on high for 6 minutes or until tender. Allow potatoes to cool slightly.
  2. Meanwhile, in a bowl, combine the Alfredo sauce, garlic powder, pepper and thyme. Stir in 1/2 cup cheddar cheese and mozzarella cheese. Cut potatoes in half lengthwise. Scoop out the pulp and add to the sauce mixture; mix well. Spoon into potato shells. Sprinkle with remaining cheddar cheese. Microwave on high for 1 minute or until cheese is melted.

I didn't measure exactly, and I put them in the oven at 400 for about 15 minutes instead of back in the microwave at the end. But with these changes they tasted great.

I don't know what it was but this wasn't as easy for me to make as the recipe made it seem. The alfredo sauce was a bit over powering too.

I thought these were delicious but I think a little less alfredo next time. I could taste potato anymore and they were a bit runny. Next time I will use 1/2 cup alfredo and maybe add some bacon ...
