this was pretty good--I added a 1 cup corn bc I was trying to clean out my frig. I only used 2 eggs bc that's all I had. I also didn't add any butter bc I'm trying to watch my fat intake, so I used 1/2 cup milk instead. Turned out really good. Next time I may add some ground turkey sausage. Read More

Delicious! I usually serve corn bread to compliment breakfast, but the cheese, onions, and broccoli make this a treat for lunch or supper time. I did as the other reviewer suggested and made these in a muffin tin. Instead of the cheddar I used Tex Mex Nacho 3 Cheese blend. Very nice! Thanks for this recipe! Read More

This recipe had mixed reviews in my house. I made it exactly as the recipe stated, except, preparing as a muffin instead of in a pan. I thought the flavor was good, but, it was really dense and heavy. My husband didn't care for it at all. In his words "it has too much going on". This was almost like a spoonbread, it was so moist. This complimented Chili Casserole well plus it got one of those blasted packages of frozen broccoli out of my freezer to make room for that all important ice cream. ;) I did use a mixture of monterey jack and sharp cheddar.
