  1. In a large saucepan, combine the potatoes, water, carrots, onion, salt and pepper; bring to a boil. Reduce heat; cover and simmer for 25 minutes or until tender. Add the remaining ingredients. Cover and simmer 30 minutes longer or until heated through, stirring occasionally. Discard bay leaves before serving.

I made this tonight & it is delicious...I used fresh green beans, so I should have added them a little sooner...they were still quite crunchy, but good...I also used V8 juice instead of plain to...

I made this recipe tonight and was very happy with the results. I used fresh vegetables and substituted the tomato juice with V-8. This is a recipe I plan to use again and again.

Originally I gave this a three, but it tastes much better after sitting in the fridge overnight, so I would suggest making it the day before you plan on serving it. I doubled the garlic and adde...

This was a pretty good soup. I did not care for the italian seasonings in a non italian dish. I'll definately be making this again (minus the italian seasoning).

very good base and generally we liked it...it just needs a bit more flavor. I used the tomato (not V8) and it was a tad bland. Will make it again but needs either V8 or more herbs
