Potato Beef Croquettes

  1. In a large bowl, beat 1 egg. Add the beef, potatoes, onion, salt and pepper; mix well. Shape into 12 balls. Beat remaining egg; dip balls into egg, then roll in the cracker crumbs. Shape each ball into a cone. In a Dutch oven or deep-fat fryer, heat 2 in. of oil to 375 degrees F. Fry croquettes, four at a time, for 2 minutes or until golden brown, turning occasionally. Drain on paper towels.

These are wonderful as a side dish, or snack..the healthier equivalent to a tater tot. The meat is also another nice touch, and holds the croquettes together well. These were even better the nex...

I used panko instead and it looked pretty. Because my mashed potato was too moist, it didn't stay the shape. Next time I make it, mashed potato should be very dry.

Very good. Tastes good dipped in bar-b-que sauce, blue cheese dressing, or ketchup. Also very good the next day cold.
