  1. Combine hash browns and butter in a greased 9-in. pie plate. Press onto the bottom and up the sides, forming a shell. Bake at 350 degrees F for 10 minutes. Meanwhile, in a skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Cool for 5 minutes. In a bowl, combine cornstarch, eggs and milk until smooth. Stir into beef mixture. Add the remaining ingredients; mix well. Pour into shell. Bake at 350 degrees F for 30-35 minutes or until a knife inserted near the center comes out clean. Let stand 5-10 minutes before cutting.

Footnotes

  • If you want to serve overnight guests Hash Brown Quiche for breakfast, assemble it the night before. Remove it from the refrigerator 15 minutes before baking.

i really liked it. We used cubed hash browns and they need more time in the oven when toasting the crust. Otherwis, it was very good.

I've made this recipe several times. I use ground turkey instead of beef. The only issue I've had is that it takes much longer to cook than 35 minutes.

I added a packet of Herb Ox No Sodium beef to my beef for additional flavor as well as mushrooms and found this recipe very easy and tasty.
