  • In a mixing bowl, combine milk and pudding mix; beat on low speed for 2 minutes (mixture will be thick). In another mixing bowl, beat cream cheese until light and fluffy, about 3 minutes. Gradually beat in lemonade concentrate. Gradually beat in pudding mixture. Pour into crust. Cover and refrigerate for at least 4 hours.

YUMMY!!! I whipped this together an hour before dinner. My family loves lemon meringue pie so this was perfect for us. It sat up quick and easily for me because I had no lemonade concentrate so I added one pack of sugar free lemonade drink mix. I did'nt read the directions correctly and it still came out great! I used 2/3 cup of lemon juice and then added handfuls ( less than 1 cup) of sugar( I tasted it until it was sweet enough). I whipped it to death!! Came out wonderful. So if you too forget to buy the correct supplies and it's too hot to go back to the store....try this! Read More

Not a bad recipe, but very tart and rich. Almost too much lemon, and could be improved with a little fruit sauce on top. It's nice and easy though, if you need something quick for dinner. Read More
