Orange-Raisin Toasting Bread

"'This tasty no-knead bread is so easy, it almost makes itself,' chuckles Virginia Doyle of Pinedale, Wyoming. 'With raisins and a hint of orange flavor, It's wonderful toasted for breakfast or anytime of the day with tea. I like to keep some on hand to share when friends stop by our ranch.'"

  1. In a mixing bowl, combine 1 1/2 cups flour, sugar, yeast, salt, and baking powder. In a saucepan, heat orange juice and butter to 120 degrees F (49 degrees C). Add to dry ingredients; beat on low speed for 30 seconds. Beat on high for 3 minutes. Add orange peel. Stir in remaining flour (batter will be thick). Stir in raisins (do not knead).
  2. Preheat an oven to 375 degrees F (190 degrees C).
  3. Coat an 8 x 4-inch loaf pan with nonstick cooking spray and sprinkle with cornmeal; spoon batter into pan. Cover and let rise in a warm place until doubled, about 45 minutes. Bake in preheated oven for 35 to 40 minutes or until golden brown. Remove from pan and cool on a wire rack.

Please don't follow the other review! Moisture-wise this recipe was PERFECT. The bread is very good and delicately flavored. Just increase the orange zest and sugar to give a bolder orange flav...

Very easy, very tasty bread! I found the liquid just right, and I don't ever count waiting for the bread to rise as "prep" time. I made it the first time with Florida's Natural orange juice, and...

this did not make itself! The prep time is wrong as you have to wait for it to double 45 minutes. It was just dense and lacking in a flavor balance of sweet and savory I think. I will not make...

something is not right at all. Liquid is missing. There's no way you'd have to "spoon" the "batter" into the baking pan with 3 cups of flour and only 1.25 cups of liquid. My guess is that an egg...
