  • In a bowl, combine the dry ingredients. In another bowl, combine eggs, honey, yogurt, oil, lemon juice and vanilla. Stir into dry ingredients just until blended. Fold in carrots, raisins and nuts if desired. Fill greased or paper-lined muffin cups two-thirds full.

  • Bake at 350 degrees F for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

The ingredients seemed a bit plain ,so to enhance the carrot and raisins I added about a 4 tbsp of fresh squeezed orange juice to the mixture. I also reduced the honey and used grapeseed oil instead of Canola . They turned out great with a pretty,brown/orange color and a hint of orange flavor. I thought these were delicious-but I made a couple of changes. I had leftover carrot pulp from my juicer, so I used 1 1/2 cups of that, which probably added more moisture. I also used 1/2 wheat flour and 1/2 white flour. Also, be sure not to over-cook them. Other than that, I did everything to recipe and we all loved them! Read More

Based on the other reviews, I added 3/4 cup canola oil, 1/2 cup brown sugar, a full cup of raisins, a 1/4 tsp of nutmeg, and 3 teaspoons cinnamon and one more egg. they came out quite moist. They aren't overly sweet. Read More
