  1. In a bowl, combine the dry ingredients. In another bowl, combine eggs, honey, yogurt, oil, lemon juice and vanilla. Stir into dry ingredients just until blended. Fold in carrots, raisins and nuts if desired. Fill greased or paper-lined muffin cups two-thirds full.
  2. Bake at 350 degrees F for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

The ingredients seemed a bit plain ,so to enhance the carrot and raisins I added about a 4 tbsp of fresh squeezed orange juice to the mixture. I also reduced the honey and used grapeseed oil ins...

I thought these were delicious-but I made a couple of changes. I had leftover carrot pulp from my juicer, so I used 1 1/2 cups of that, which probably added more moisture. I also used 1/2 wheat ...

A little sweet. PBD loves them

Very light and not too sweet

Excellent muffins. I used 1/2 ww flour and 1/2 white. I didn't have quite enough honey (didn't matter). They were very moist!
