Asparagus in Vinaigrette

  1. Place asparagus in a steamer basket. Place in a saucepan over 1 in. of water; bring to a boil. Cover ad steam for 6-8 minutes or until crisp-tender. Rinse with cold water; drain well. Place in a bowl; add the green onions, green pepper, pickle relish and garlic.
  2. In a small bowl, whisk the oil, lemon juice, onion, parsley, salt and pepper. Pour over asparagus mixture and toss to coat. Cover and refrigerate until chilled. Serve with a slotted spoon.

Wonderful flavor. The only suggestion I would make is to use an ice water bath for the asparagus after the steaming. The ice water immediately stops the cooking so asparagus doesn't get over coo...

The relish worked nicely with the lemon, however if the dish is chilled in the fridge too long the oil tends to solidify making the dish not as presentable. Also leftovers do not keep well.

I tried it with a variety of vegetables, which was really good, but this recipe is definitely better if you serve it hot.
