  1. In a soup kettle or large saucepan, saute the carrots, potatoes, parsnips and onion in butter for 5 minutes. Stir in flour until blended. Add the hot dogs, milk, soup, water, basil and pepper; bring to a boil. Reduce heat; cover and simmer for 25-30 minutes or until vegetables are tender, stirring occasionally.

This soup is wonderful. Hearty enough to fill my hubby and still basic enough not to "gross out" the kids. We used the cheap chicken hot dogs and it worked out great.

this was good. the kids ate it, and couldn't even tell there were parsnips in it.

Sounds crazy, but tastes good, is easy to prepare, and is very forgiving of modifications.
